Allow us to introduce “Legacy in Layers,” Regent Hong Kong’s 2026 Cakes & Pastries collection, available from 1 September 2026. Envisioned by Executive Pastry Chef Andy Yeung, Pastry Chef Chase Tse and their team, it is a collection that treats pastry not as mere confection, but as conviction — a belief that dessert, crafted with intention, becomes a form of storytelling and an immersive culinary journey in miniature.

Regent Hong Kong’s Legacy in Layers at a Glance

“Legacy in Layers” is Regent Hong Kong’s 2026 Cakes & Pastries collection, created by Executive Pastry Chef Andy Yeung, Pastry Chef Chase Tse and their team. The collection brings together signature cakes, seasonal creations, cheesecakes, mille-feuille, fresh crème cakes and individual pastries, all presented in a newly reimagined envelope-inspired cake box.

The collection is available from 1 September 2026 at The Lobby Lounge, Regent Hong Kong, where guests can enjoy pastries in a harbourfront setting overlooking Victoria Harbour or select creations to take home for gifting and celebrations.

Craft You Can’t See, But Always Taste

Observe Chef Andy and Chef Chase at work and something quietly reveals itself: their precision reads almost as tenderness. Nothing is rushed. Every element earns its place, every layer is set with intention, and every flourish is held back just enough to let the ingredients speak for themselves.

Much of what makes these creations sing happens behind the curtain — a single hero ingredient given room to shine, temperatures controlled to the degree, the kind of meticulous craftsmanship that simply cannot be hurried. You may never witness it, yet you will taste it in every bite: a gentle crescendo of textures revealed not all at once, but slowly, layer by layer.

The Envelope, Please: A Cake Box Reimagined

Before the lid is even lifted, the story has begun. For 2026, Regent Hong Kong has reimagined its packaging entirely — transforming the humble cake box into something closer to a sealed envelope, quietly guarding the secrets of the pastry kitchen within.

At its heart rests the iconic “R” wax seal: not merely decorative, but a mark of authorship and a signature of brand authority. The lid folds like a letter flap, sealed as though carrying a private note from the kitchen to its guest, while embossed lines ripple across every surface — a tactile echo of the unseen layers of craft held inside.

The palette is drawn from the collection itself: soft celadon tones speaking to its natural, ingredient-led sensibility, finished with a deep teal wax seal and a branded satin ribbon. Even the paper bag continues the language, its ribbon handles inscribed with the Regent Hong Kong wordmark and a miniature envelope-shaped tag suspended like a whispered postscript.

It is packaging conceived to be opened slowly, with a little ceremony. Not a container — the first chapter.

The chefs never set out to create stand-alone showpieces. Instead, they have composed a curated sequence in which every flavour earns its place.

At its centre lies an artful interplay between two worlds: Hong Kong’s vibrant, market-bright energy and the tranquil, structured architecture of French pastry. Even colour here is earned, never applied — each pastry drawing its tones of citrus-gold, cocoa-deep and berry-soft naturally from the ingredients themselves.

Five Cake and Pastry Families, One Philosophy

Beyond the headline creations, “Legacy in Layers” unfolds into five cherished families.

The Regent Signature Series makes the boldest statements — a Honeycomb Cake layering pecan sponge with silky longan honey cream; a 70% Pure Peruvian Chocolate Cake balancing single-origin intensity against vanilla-orange crémeux and hazelnut praline; and a Hong Kong Saint Honoré reimagining the city’s café culture through white coffee cream, milk tea crème pâtissière and Chinese almond praline.

The Seasonal Flavours appear only at each fruit’s peak — the Charlotte Cake, wrapping vanilla mousse in lady finger sponge over buttery Breton sablé, alongside a ripe Mango Tart and the contemporary Citrus Noir Pineapple Tart.

The Cheesecake Collection is led by The Steak House Classic, now joined by a Blueberry edition folded with housemade blueberry-lemon jam.

The Mille-Feuille offers laminated pastry baked to a shattering crispness, in mixed berries, mango and pistachio.

And the Fresh Crème Cakes — impossibly fluffy sponge and silky Hokkaido cream crowned with seasonal fruit — run from timeless Strawberry to sun-golden Mango.

Some of the city’s sweetest moments are the quiet ones. Three signature pastries translate these intimate touchstones into the language of French pâtisserie.

The HK St. Honoré is cha chaan teng nostalgia dressed for the occasion — a gentle bitterness of Chinese almond, the comforting richness of milk tea crème pâtissière, and an airy coffee whip finishing it like that last, treasured sip at the bottom of the cup.

The Honeycomb is soft, floral and sunlit: longan honey mousse melting into a delicate perfume, balanced by the warm nuttiness of pecan sponge — a quiet luxury remembered long after the plate is cleared.

The Sesame Tofu is an ode to the dessert shops of old Hong Kong, reimagined with contemporary refinement: silky tofu mousse kept pure, black sesame arriving deeper and roasted, with sesame florentine and charcoal sablé for crisp contrast.

For a cleaner, European mood, the chefs turn to bright fruit and couture-like chocolate in signatures such as Raspberry Cherry, Pistachio Choux, Cacao Hazelnut and Lemon Mint.
