This is not reinvention. It is return. 

When Regent Hong Kong re-emerged on the Kowloon waterfront, its flagship Chinese restaurant reclaimed more than a name. After years as Yan Toh Heen under the InterContinental flag, the signage was restored to Lai Ching Heen — a homecoming that honoured the room’s original heritage while ushering it into a new era of discreet luxury, reimagined by design visionary Chi Wing Lo. The soul of the kitchen, however, never left. 

Two Masters, One Vision: The Soul of a Two MICHELIN-Starred Synergy  

At its helm stand Executive Chef Lau Yiu Fai and Head Chef Cheng Man Sang Cheng. Their 25-year partnership is a rare continuity in a city where culinary talent migrates with every Michelin cycle. Together — through uncompromising dedication, relentless refinement, and an exacting standard passed down through generations — they have quietly built the foundation for the accolades that now define this room: two MICHELIN Stars and two Black Pearl Diamonds. 

These honours are not bestowed by chance. They are the culmination of four decades of discipline — a legacy written in hand-chopped carp farce, in sauces adjusted grain by grain, in plates that arrive at the table at precisely the right temperature, every single night.

Beyond the Recipe Book: Defining Culinary Perfection Through Attitude  

Chef Lau entered the culinary world at fourteen, apprenticing through Hong Kong’s independent restaurants before joining the original Regent in 1980. His ascent through traditional Cantonese kitchens — in Hong Kong, briefly in Vancouver, then back to lead what was then Yan Toh Heen — was forged in an era where hierarchy was absolute and mastery was earned through repetition. 

“In the past, every master chef kept a recipe book,” Chef Lau reflects, “but the true knowledge — the fire, the timing, the instinct — those could only be passed down through instruction and an unrelenting desire to improve.” 

Today, as a mentor to generations of chefs heading their own establishments, Chef Lau’s philosophy is unchanged: “The most crucial element that makes a fine chef is not talent, but the right attitude. One must first demand excellence of oneself. If you do not expect perfection from your own hands, how can you deliver it to your guests?” 

In a city with no formal certification for young chefs, Lau’s standard is the only credential that matters — and it is the very standard that elevated Lai Ching Heen to its place among the world’s most distinguished Cantonese destinations. 

Tradition, Considered 

Chef Lau’s approach to innovation is best understood through what he chooses not to change. A blender transforms dried codfish into powder, but diced carp for poaching is still hand-chopped and hand-beaten, yielding a texture no machine can replicate. 

“Tools facilitate,” he says. “But one must understand the purpose behind doing something by hand — and why that purpose must be honoured.” 

His creative philosophy: “A chef does not invent food from nothing. We are like fashion designers — we take familiar ingredients and classic techniques, and through experience, recompose. The ingredients may not always be new, but the experience can be.” 

This sensibility defines his reimagined Peking Duck — a dish synonymous with Lai Ching Heen since its debut. Departing from the traditional pancake, Lau fans out the crisp skin, pairs it with steamed flour wrappers, and introduces pineapple and green papaya alongside cucumber and sauces. Familiar yet refreshed. It is this quiet, deliberate evolution — never abandoning the soul of Cantonese cooking — that has earned the kitchen its stars. 

The Architecture of a Kitchen 

Where Chef Lau sets the vision, Head Chef Man-Sang Cheng is its architect. In the traditional Cantonese brigade, Chef Cheng earned every step, from seafood station to fifth stove to head chef. Lau provides the philosophical framework; Chef Cheng translates it into exactitude. Together, they trial new dishes through repeated iterations, refining aroma, texture, and flavour until every element aligns. 

“Chef Lau leads by example,” Chef Cheng says. “He shows us that decency and the pursuit of excellence must go hand in hand.” 

Hallmarks of the Lai Ching Heen Experience 

The menu is a masterclass in restraint — Golden Stuffed Crabmeat in Shell, Braised Whole Abalone atop a Crispy Taro Net, Fortune Chicken baked five hours in lotus leaves and pond soil, Wok-Fried Kagoshima Wagyu, and Wok-Fried Lobster with Crabmeat Roe and Fresh Milk. Each dish reflects decades of refinement, the art of Chinese tea culture thoughtfully paired tableside, and a standard of service excellence that anticipates without intruding.
