In 2026, Hong Kong omakase enters a new chapter as Nobu Hong Kong launches its highly anticipated Prefecture Premium Omakase Series, beginning with the winter flavours of Hokkaido. Available exclusively from January to February, this limited-edition seven-course omakase experience celebrates the distinct terroir, ingredients, and culinary traditions of Japan’s northernmost prefecture.
Hokkaido is renowned for its pristine seas, fertile land, and cold climate, which together produce ingredients of exceptional clarity and depth. Drawing inspiration from the region’s natural abundance, the Hokkaido Prefecture menu is elevated through Nobu’s signature Japanese-Peruvian style—balancing purity, innovation, and seasonality with refined precision.
The journey begins with a choice of two ocean-inspired starters: Oyster with Melon Salsa, where refreshing sweetness enhances briny minerality, or Zuwaigani with Creamy Kani Miso, highlighting tender snow crab layered with deep umami. Both dishes reflect Hokkaido’s cold-water harvest at its finest.
A comforting centrepiece follows with the Hokkaido Seafood Ishikari Nabe, a traditional winter hotpot reimagined through Nobu’s contemporary lens. Premium seafood—including king crab, squid, salmon, seabass, shrimp, and seasonal vegetables—is gently simmered in a rich miso broth, evoking the warmth and nostalgia of Hokkaido’s winter cuisine.
