3 Jun 2025 (Hong Kong SAR) – This summer, escape the heat and chill out in The Lobby Lounge at Regent Hong Kong over shareable Ice Cream Creations – a decadent and refreshing three-part summer dessert series that explores the changing light, mood and flavours of the season. 

Starting with a foundation of ice cream or sorbet, each creative composition builds upward with fresh fruit, delicate pastry, indulgent sauces, and intriguing textures that surprise and delight. From bright and airy to rich and golden, each Ice Cream Creations offers a distinct experience: perfect for sharing, reflecting, celebrating, or simply pausing to savour, while taking in the awe-inspiring Victoria Harbour and Hong Kong skyline views from The Lobby Lounge. 

 

  1. Blueberry Cheesecake Velvet

HK$398 | Available 16 June – 20 July 2025 

The debut of our Ice Cream Creations begins with Blueberry Cheesecake Velvet, a refreshing summer dessert with understated elegance. This opening creation offers a soft reinterpretation of cheesecake – rendered lighter, cooler and more intricate, in line with the season’s early calm. 

At its centre is a cream cheese ice cream, smooth in texture and delicately tangy, set atop a biscuit foundation layered with oat crumble, blueberry meringue, and fresh blueberries. Cubes of cream cheese echo the lead flavour, while a clarified blueberry coulis served on the side allows guests to tailor each bite to their tastes. The composition is topped with marble chocolate shard and a sprig of fresh mint, adding both contrast and an aromatic lift. 

The overall experience is one of gradual unfolding: a balance of creamy and crisp, tart and sweet. The blueberry coulis provides a burst of concentrated fruit, while the meringue introduces a whisper of crunch. Familiar yet transformed, it is a dessert crafted for slower moments and warm afternoons. 

 

  1. II. Golden Tropics

The second Ice Cream Creations in the summer series shifts to vibrancy with Golden Tropics, a dessert channelling the energy and brilliance of midsummer. Lush and expressive, it captures the spirit of a tropical escape through vivid colours, bold flavours and lively textures. 

The composition pairs coconut ice cream with passion fruit sorbet – an interplay of creamy and crisp, mellow and tart. These elements are layered with mango-lime confit, lemon marshmallow and a medley of fresh tropical fruits including pineapple, mango and passion fruit. Garnishes of crispy pineapple slices, toasted coconut chips and citrus zest add both visual appeal and a playful crunch. 

To encourage personalisation and interaction, the dessert is served with mango coulis, passion fruit crunch and chocolate pearls on the side – components that guests may pour, scatter or share as they please. 

Each spoonful offers a dynamic contrast: the sharpness of citrus, the smooth body of coconut, the cooling intensity of sorbet and the crisp textures of dried fruit and coconut. Micro lemon balm and lime zest create cohesion with a subtle herbal brightness, enhancing its complexity. Golden Tropics is designed for moments of shared enjoyment, spontaneous indulgence or as a vivid interlude during a languid summer afternoon. 

 

III. Pistachio Gold Baklava 

HK$428 | Available 25 August – 28 September 2025 

The final creation in the summer series arrives with decadence and depth. Pistachio Gold Baklava is layered in richness – aromatic, textural and quietly indulgent. Drawing from Middle Eastern and Mediterranean inspirations, this creative composition offers a reflective close to the summer season. 

At its heart is honey pistachio ice cream – creamy, nutty and fragrant – resting atop a base of pistachio praline and crisp golden kataifi (traditional Greek shredded filo) pastry. Beneath it lies a pistachio sponge, anchoring the dessert with soft, earthy undertones. Roasted pistachios and caramelised filo shards introduce a satisfying crunch, reminiscent of traditional baklava. Accents of honeycomb and gold leaf add visual brilliance and a touch of luxury. 

A warm cinnamon crème anglaise is served alongside, offering a contrast in temperature and finesse in flavour. When poured, it enriches the experience with a velvety finish and subtle spice. 

The result is a dessert that reveals itself slowly: cool ice cream against warm sauce, crisp pastry with tender sponge and sweet spice balanced by toasted nuts. Pistachio Gold Baklava invites guests to linger, share, or quietly savour the final days of summer. 

 

Ice Cream Creations will be available from 16 June to 28 September 2025, exclusively at The Lobby Lounge, Regent Hong Kong. Each decadent dessert, presented daily in limited quantities, is, thoughtfully crafted for sharing – offering a multi-sensory experience best enjoyed together.
