12 October 2026 (Hong Kong SAR) — This autumn, Regent Hong Kong presents an exclusive afternoon tea collaboration with acclaimed French pastry chef Gabriel Le Quang, Meilleur Ouvrier de France Pâtissier 2023, available for a limited time from 30 October to 6 December 2026.
More than an afternoon tea, the experience is an elegant dialogue between French pâtisserie, Regent Hong Kong’s contemporary design language and the luminous waterfront setting of Victoria Harbour. Chef Gabriel’s exacting technique takes shape in refined edible forms, where every layer, texture and finish is crafted with precision, yet intended to be savoured with ease.
Inspired by the hotel’s considered interiors, the collection explores the beauty of contrast — structure and softness, precision and emotion, richness and lightness. Circular and gently rounded forms echo the graceful curves found throughout Regent Hong Kong, expressing a quiet sense of harmony and balance.
A soft, understated palette reflects the hotel’s use of natural materials, while Chef Gabriel’s focus on pure ingredients allows flavour and craftsmanship to take centre stage.
The Fruit of a Long Journey
Gabriel Le Quang’s path to the pinnacle of French pâtisserie began in Paris, where an early stage at Le Carré des Feuillants first ignited his passion for the craft. He went on to hone his skills with some of France’s most respected pastry houses and institutions, including Delmontel, Stéphane Glacier and Arnaud Larher, before further refining his approach at The Peninsula and Hôtel du Cap-Eden-Roc.
In 2023, following more than three years of dedicated preparation, he was awarded the coveted title of Meilleur Ouvrier de France Pâtissier. Reflecting on the achievement, Chef Gabriel describes it as “C’est le fruit d’un long cheminement” — “the fruit of a long journey.” The sentiment lies at the heart of this collaboration: an appreciation of patience, discipline and the years of refinement behind even the most fleeting moment of pleasure.
At Regent Hong Kong, this philosophy finds expression in an afternoon ritual shaped by care and intention. Each creation is meticulously balanced and finished, inviting guests to pause, observe and indulge in a moment of understated pleasure.
From Delicate Savouries to Sculptural Sweets
The journey begins with Caramelized Onion, Chestnut Foam and Crispy Shallot, a delicate opening bite that introduces notes of warmth, earthiness and gentle crunch. A refined savoury selection follows, featuring Croque Monsieur with Truffle Cream; Smoked Salmon with Horseradish Mayonnaise and Salmon Roe; Foie Gras Mousse with Hazelnut and Fig Chutney; and Mushroom Duxelles with Parsley Emulsion and Garlic Chips. Each brings together classic French flavours and a luxurious Regent sensibility.
The pastry selection offers polished expressions of familiar comforts: Praline Chocolate Cookies, Almond and Fig Travel Cake, and Passionfruit Mango Chocolate Bonbon — small indulgences that reveal the chef’s command of flavour, texture and proportion.
At the heart of the experience are three signature sweets. Walnut Paris-Brest reinterprets the French classic through walnut croustillant choux pastry, walnut praline and crémeux, delivering a deeply nutty, indulgent finish. Oolong Caramel Millefeuille layers crisp puff pastry with oolong tea pastry cream, brown caramel and white opaline, creating a graceful meeting of French technique and Asian tea notes. For a lighter, brighter counterpoint, Grapefruit and Coconut combines roll cake sponge, coconut crémeux, dacquoise and grapefruit compote in a composition of tropical softness and citrus lift.
Selected chocolate creations showcase Weiss, a French artisanal chocolate maker founded in Saint-Étienne in 1882, with more than 140 years of chocolate-making expertise. Renowned for its mastery of blending and uncompromising approach to quality, Weiss carefully selects its cocoa origins and ingredients to create chocolates of remarkable balance, clean label, with aromatic complexity and purity of flavour. Rooted in generations of French craftsmanship and made with 100% pure cocoa butter, Weiss brings depth, precision and character to Chef Gabriel’s pastry creations.
Together, these creations invite guests to experience pâtisserie as a form of design — considered, tactile and quietly expressive, where beauty is inseparable from flavour.
